Prosciutto Fruit Bundles rec.food.recipes/Meg Fortino
Dressing: 1 1/2 Tbsp rice wine vinegar 1 Tbsp light soy sauce 1 green onion, chopped 1 (4 inch) rib celery, chopped 1/2 tsp sugar 1/2 tsp lemon rind 1/4 tsp ground ginger
Bundles: 4 (3 x 1/2 inch) slices cantaloupe 4 (3 x 1/2 inch) slices pineapple 4 (3 x 1/2 inch) slices honeydew melon 8 julienne strips celery 8 julienne strips green pepper 8 julienne strips red pepper
3 oz prosciutto, trimmed of fat, cut into 1/2 inch strips 2 Belgian endive
Combine dressing ingredients in blender or food processor.
Marinate the bundle ingredients for 30 minutes.
Drain the bundle ingredients from the dressing.
Wrap ham around the bundle ingredients, using the following combinations:
cantaloupe and celery pineapple and green pepper honeydew and red pepper
Place each ham-wrapped bundle on a leaf of Belgian endive.
