Cranberry Meatballs Newsgroups/Stelle Serves 6
A great holiday season main dish or hors d'oeuvre for a party
Meat Balls 2 lbs ground beef 1 lb pork sausage 1/2 cup fresh cranberries, chopped 1 (5 oz) can water chestnuts, chopped 1/2 cup onions, minced 2 eggs 1 tbsp soy sauce 1/2 tsp salt 1/4 tsp pepper 1/4 cup margarine
Sauce 4 cups cranberry juice cocktail 1/2 cup cider vinegar 1/2 cup sugar 6 tbsp cornstarch 1/2 tsp salt 4 chicken bullion cubes
Mix all meatball ingredients together except margarine.
Roll meat into approximately 1-inch diameter balls and brown in a fry pan with margarine.
Combine all sauce ingredients and boil in a saucepan until thick and clear.
For a main dish, combine browned meatballs and sauce and spoon over rice or noodles. Add sauteed mushrooms if desired.
Or, put sauce and meatballs into a crock pot set to low heat and serve as an hor d'oeuvre.
Note: Ground turkey and turkey sausage may be substituted for the ground beef and pork sausage.
