The above instructions are for making the basic beef recipe. Add the following amounts of herbs and spices prior to refrigeration and mix thoroughly to gain a specific type of sausage with a different flavor:
Smokey Summer Sausage 2 tsp garlic powder, 2 tsp mustard, 1 Tablespoon Liquid Hickory Smoke
Italian Sausage 2 tsp sugar, 1 tsp cayenne pepper, 2 tsp cracked fennel seeds, 2 tsp coriander
Salami Sausage 2 tsp ground white pepper, 1/2 tsp ginger, 1/2 tsp garlic powder
Cooking Instructions Shape into 5 rolls, about 1 lb each. Bake on a broiler rack in oven for 2 hours and 25 minutes at 275 degrees. Cool, slice, and serve.
