Easiest Potato Soup
6 or 7 potatoes, diced 4 or 5 stalks of celery, chopped 1 small onion, chopped 3 tablespoons butter 2 tablespoons flour 1 can chicken broth 1 can evaporated milk
Boil potatoes until almost done. Reserve 2 cups of the potato water. Saute celery and onions until tender in butter. Stir in flour until smooth. Add reserved potato water, broth, evaporated milk, and potatoes. Heat almost to boiling. |
