Country Pork Chop Dinner Recipe By :Taste Of Home's Quick Cooking May/Jun, 2000 Serving Size : 4
4 pork loin chips (1/2" thick) 1 small onion -- chopped 1 tablespoon vegetable oil 4 medium red potatoes -- cubed 1 cup carrots -- thinly sliced 1 jar sliced mushrooms (4.5 oz) or 1 cup fresh -- drained and sliced 1 can condensed cream of celery soup (10.75 oz) -- undiluted 1/2 cup water 1 teaspoon salt (optional) 1/2 teaspoon dried thyme (up to 1 tsp)
Ready in 1 hour or less.
In a large skillet, cook pork and onion in oil until meat is browned; drain. Top with potatoes, carrots and mushrooms. Combine the soup, water, salt if desired and thyme; pour over vegetables. Bring to a boil; reduce heat. Cover and simmer for 25-30 minutes or until vegetables are tender.
