Spinach Dip

1 pound mixed cheeses (cheddar and mozzarella are great), cut into cubes
one can chopped spinach, drained (or frozen, thawed and drained)
one can Ro-tel brand diced tomatoes with green chiles

Mix together and microwave until hot. Serve with a good bread, cut into cubes as for fondue.
