Artichoke and Cheese Squares
2 (6 oz) jars marinated artichoke hearts -- chopped 1 small onion -- minced 1 clove garlic -- minced 4 eggs 1/4 cup fine bread crumbs 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon oregano 1/4 teaspoon Tabasco sauce, or to taste 8 ounces shredded cheddar cheese 2 tablespoons minced fresh parsley
Drain marinade from one jar of artichokes into a frying pan. Drain other jar (discard marinade). Chop artichokes and set aside.
Add onion and garlic to frying pan and sauté until onions are clear, about five minutes. In a bowl beat eggs with fork.
Add bread crumbs, salt, pepper oregano and Tabasco. Stir in cheese, parsley, artichokes and sauteed onion mixture.
Turn into greased 7"x11" baking pan. bake 325F for 30 minutes or until set in center. Let cool in pan. Cut into 1" squares. Serve cool or reheat in pan at 325F for 10 minutes. Garnish with parsley. |
