Title: Carrot and Raisin Muffins

1/3 cup oil
1/2 cup brown sugar, firmly packed
4 egg whites
1/2 cup orange juice
1 1/4 cups carrots, finely grated (2 medium carrots)
1/2 cup raisins
1/2 cup chopped walnuts
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon

Sift together the flour, baking powder, baking soda and cinnamon. Add the brown sugar (breaking up any lumps), raisins and walnuts and mix in.

Mix together the oil, egg whites and orange juice. Add to the dry ingredients with the grated carrot. Mix gently until flour is just dampened. Spray or grease 12 muffin cups. Divide mixture evenly between them. Bake at 375F/190C for 12-15 minutes, or until muffins spring back when pressed lightly in the center. Cool on a wire rack.
