Roasted Onion Spread Recipe By : Michael Roberts, Los Angeles Ca. Serving Size : 8 to 124 large onions, chopped 3 large cloves garlic, minced 1 tablespoon olive oil or salad oil 1 cup small-curd cottage cheese 1/2 teaspoon freshly ground pepper Salt Whole wheat or rye toast, toasted bagels, or whole-grain crackers
In a 9 by 13-inch baking pan, mix onions, garlic, and oil. Cover pan tightly with foil.
Bake in 450° oven for 40 minutes. Uncover pan and stir onions, then continue to bake, uncovered, stirring once, until onions are browned (20 to 30 more minutes).
Spoon onion mixture into a food processor or blender; add cottage and pepper.
Whirl until pureed, season to taste with salt. Serve warm or cool, with toast. if made ahead, let cool; then cover and refrigerate up to 1 week. |
