Mama's Italian Meatloaf By Natalie Haughton. Source: Los Angeles Daily News 5-31-2000.
2 pounds lean ground beef 1 pound Italian sausage 1 1/2 cups cracker crumbs 2 eggs -- beaten 1 medium onion -- chopped 1 green pepper -- chopped 1 teaspoon oregano 1/2 teaspoon salt 1/4 teaspoon pepper 1 clove garlic -- minced 1 cup pizza sauce 1/2 pound prosciutto (Italian ham) -- thinly sliced 8 ounces sliced Provolone or Swiss cheese 1 can drained sliced mushrooms -- 8-oz.
Mix first 10 ingredients together along with 3/4 cup pizza sauce until well blended.
Pat 1/2 of meat mixture into an oval shape in bottom of an ungreased 9x13-inch pan. Cover top of meat with prosciutto, cheese and mushrooms. Top with remaining meat mixture, making certain sides of meat are sealed by pinching together.
Spread top of meatloaf with remaining 1/4 cup pizza sauce.
Bake in preheated 375-degree oven 1 hour 15 minutes. Let stand 5 minutes, then cut into slices to serve.
