CLONMEL KITCHEN TOFFEE COOKIES
2 1/4 cups rolled oats 2 6 oz. packages Hershey's toffee bits 1 2/3 cups all purpose flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 cup firmly packed brown sugar 3/4 cup granulated sugar 1 cup unsalted butter 2 large eggs 1 tablespoon pure vanilla extract
Preheat oven to 375 deg. In large bowl mix the oats with the toffee bits. In food processor, mix the sugars until blended, then gradually add the butter and process till creamy and smooth. Add the eggs and vanilla a process till blended.
Mix the flour, baking soda, and baking powder, and salt. Add to the creamed mixture until blended. Add all this to the toffee bits and oats and mix well. Drop by tablespoons onto ungreased or parchment-lined cookie sheets, and bake l2 to l5 minutes. THEY SPREAD ALL OVER THE PLACE SO SPACE THEM WELL APART. I can get about 8 on one cookie sheet. Let them cool about 2 min. before removing to wire racks.
