Food Processor Fudgy Chocolate Chip Cookies From: Chocolat - Canadian Living's Best
10 oz. semisweet chocolate, chopped 1 cup granulated sugar 1 cup packed brown sugar 3/4 cup butter, softened and cubed 2 eggs, lightly beaten 1 tsp. vanilla 1 3/4 cups all-purpose flour 1 tsp. baking soda 1 cup semisweet chocolate chips
In food processor, chop together chocolate and granulated and brown sugars until chocolate is powdery. Add butter; pulse until well combined.
Pour in eggs and vanilla; blend until completely moist, scraping down bowl once. Add flour and baking soda; pulse until blended. Transfer to bowl. Stir in chocolate chips. Drop by heaping tablespoonfuls about 2 inches apart, on greased or parchment-lined cookie sheets. Bake at 350 deg. for about 12 minutes or until puffed and set around edge but still soft in the middle. Let cool on sheets on rack for about 5 minutes. Transfer to racks to cool completely.
Dough can be wrapped in plastic wrap and refrigerated for up to 3 days. Or place in heaping tablespoonfuls on baking sheets and freeze; transfer to rigid airtight container and store for up to 2 weeks. Bake frozen, adding 2 minutes to baking time. |
