Recipe: Genuine Fried Clams

Take the clams and wash them off, plunge them in an egg wash.
Dip them in flour.
Dip them in the egg wash quickly again.
Cover them with breadcrumbs or corn meal.
Plunge them in hot vegetable oil and wait a couple of minutes until they're nice and golden brown. Oh, and be gentle when you handle the clams in order to avoid damaging them.

This is how I used to make them when I worked in a seafood restaurant ages ago. Although I don't eat them, those fried clams used to sell out very quickly at the libby cubby hole of a take out restaurant where I used to work in the Northeast.
