Here is a family favorite, which I have made just for 2 by halving everything but the cooking time:
4 skinless, boneless chicken breast halves dry breadcrumbs 1/4 cup crumbled feta cheese (1 ounce) fresh chives, basil, and/or whatever herbs you like 2 Tblsp butter, melted
Pound chicken breasts to 1/4-inch thickness. Rinse under water and shake off excess. Dredge in breadcrumbs. Spoon 1 Tblsp feta onto each piece of chicken, along with a sprinkle of herbs. Fold breast in half. Place folded chicken in a baking dish and drizzle melted butter over. Bake, uncovered at 400 degrees F for 25 minutes or until chicken is done.
A serving option is to put the completed chicken on a mixture of spinach and fresh basil, which have been tossed with 1 Tblsp balsamic vinegar to 1teas olive oil and sprinkled with pepper. Have a baked potato on the side. Yum. |
