This is what I'm going to try with the turkey dinner leftovers...
Take 2 flour tortillas, put down a thin layer of Jack cheese, layer of sliced turkey, layer of red onion slices, scatter with minced black olives and another thin layer of cheese top with the second tortilla. Dry toast (fry) on both sides till crisp then cut in half and then wedges.
Serve with some of your leftover cranberry sauce that you add some crushed pineapple to, minced jalepenos and a splash of vinegar of your choice to make it a salsa. ...see below Serve the wedges with the salsa and a dolop of sour cream or plain yogurt...whatcha all think? sounds yummo to me!
Cranberry Salsa
Yields: About 3 1/2 cups...I'd cut this in half
* 3 tablespoon olive oil * 1 medium red onion, sliced thin * 1- 12-ounce bag cranberries (3 cups) * 1/2-3/4 cup packed light brown sugar * 1/2 teaspoon salt * 1- 8-ounce can sliced pineapple, drained and chopped * 1 4-ounce can chopped mild green chilies, drained.......use fresh jalepenos...or plain green peppers sliced thin.
I'd add a splash of apple cider vinegar to this to cut the sweet, myself....
Make cranberry sauce in the usual way but with brown sugar. Cook over medium-high heat, stirring frequently, until cranberries pop and mixture boils and thickens slightly. Remove saucepan from heat; stir in pineapple and green pepper strips or minced jalepenos, sliced red onion and the olive oil.
Serve warm or cold. |
