Butterscotch Refrigerator Cookies
1 c butterscotch chips 2 3/4 c flour 1 c butter, softened 1/2 c sugar 1/2 c packed brown sugar 1 egg 1/2 tsp baking soda 1/2 c chopped pecans
Melt chips over low heat until melted. Place mixture into large mixing bowl; add all ingredients, except nuts. Beat at slow speed until well mixed. Stir in nuts by hand. Divide dough in half. Shape each half into 8x 1 1/2" roll. Wrap in plastic wrap and refrigerate until firm { at least 2 hours} Heat oven to 400. Cut rolls into 1/8" slices. Bake 5 to 7 minutes. Cool and remove from cookie sheets.
Makes 6 dozen cookies
