Herbed Potato Wedges This is a great recipe when cooking for one or two. And it can easily be adapted for more than 2 servings too.
3 tbsp Parmesan cheese 1 tbsp dried basil 1/4 tsp each, salt and pepper 1 large unpeeled baking potato, cut into lengthwise wedges 2 tsp vegetable oil
In a shallow bowl, combine the cheese, basil, salt and pepper. Brush cut sides of the potato with oil. Dip into cheese mixture. Place in a greased 8 inch baking dish. Bake uncovered at 400 degrees for 20 to 25 minutes or until potatoes are fork tender.
Yield: 2 servings
