LOW FAT SCALLOPED POTATOES From: the American Association of Cancer Research
8 medium potatoes, thinly sliced 1 large onion, chopped 2 tbsp. all-purpose flour Salt and pepper 2 cups hot low-fat milk 1 cup shredded fat-reduced Cheddar cheese
Spray 13 x 9-inch baking dish with nonstick coating.
Arrange one-third of the potatoes over bottom; sprinkle with half of the onion, then half of the flour. Season with salt and pepper to taste. Repeat layers; arrange remaining potatoes over top. Pour hot milk over. Sprinkle with cheese.
Bake, uncovered, in 350 F oven for 1 hour or until potatoes are tender.
Each of the 8 servings contains 213 calories and 3 grams of fat.
