PLANTAIN WITH SPICES From: the American Association of Cancer Research
Certain spice blends are associated with different cultures. In this dish, plantains are mixed with a sweet and spicy combination of cinnamon, cloves and nutmeg to conjure up a taste of the Caribbean.
1-1/2 Tbs. butter or canola oil 2 yellow plantains, peeled and sliced 1/4" thick on the diagonal 1/2 tsp. cinnamon 1/4 tsp. ground cloves 1/4 tsp. ground nutmeg
In a large skillet, melt the butter or heat the oil over the medium-high heat, and cook the plantains with half of the spices for 4-5 minutes. Turn the plantains, sprinkle with the remaining spices and cook until golden brown, about 4 minutes more.
Each of the four servings contains 129 calories and 5 grams of fat.
