Texas BBQ Pot Roast
1 (4 lb.) roast, chuck or bottom round 1 tsp. vegetable oil 1 cup bottled barbecue sauce 1/2 cup cider vinegar 1/2 cup beef or chicken broth 1/4 cup light brown sugar 1 tbsp. mustard, prepared 1 tbsp. Worcestershire sauce 1 tbsp. chili powder 1 large onion, chopped 2 large cloves garlic, crushed 1 1/2 tsp. thyme (I don’t use the thyme) 12 rolls
Heat oven to 300 degrees.
Brown meat in oil in a large ovenproof Dutch oven, 15 minutes.
Add sauce, vinegar, broth, sugar, mustard and Worcestershire, chili powder, onion, and thyme to pot. Bring to boil.
Bake, covered at 300 degrees for 3-4 hours, turning meat every hour, until tender.
Let stand at least 30 minutes in pan. Slice and serve on rolls with sauce.
