King's Hawaiian Bread

This is a dead ringer for King's Hawaiian Bread.

Got a bread machine? Even better....Here's the bread machine version
first:

1 small or 1/2 large potato, diced, them boiled and mashed
(or use about 1/3 cup instant mashed potatoes mixed with 1/3 cup water. It's cheating, but it works.)
2 tbsp. potato water (if you didn't use the instant potatoes)
1 tbsp. sugar
1 to 1-1/2 tsp. yeast

Combine and let rise, then add to machine with the following ingredients:

2 tbsp. milk
2 tbsp. butter or oil
1 whole egg + 1 yolk
3/8 cup sugar
1/2 tsp. salt
2-1/4 cups flour (approximate, as always, with bread)

Use your "Regular White Bread" cycle and be patient.

If you no have bread machine, go crazy and make 2 loaves. Make 'em in foil pie pans and they'll look JUS' like Kings.

By-Hand Kine Recipe

1 boiled potato
1/4 cup potato water
2 TBS sugar
1 pkg (1 tbsp) yeast
1/4 cup milk
1 tsp salt
3 eggs
3/4 cup sugar
1/4 cup butter
4 cups (or more) flour

Combine potato, potato water, sugar, and yeast. Allow to start rising (proofing the yeast) then add remaining ingredients. Knead until it's satiny. Let rise until double. Punch down. Shape into two balls, let rise in OILED cake pans (or those foil pie pans, oiled) until doubled. Bake at 375 degrees 30 to 40 minutes, until top sounds hollow when rapped.

Okay, so you want the crust real soft like King's and this crust seems too crisp? Ah-hah! Just cool 'em and put 'em in a plastic bag a few hours. Instant soft crust.
