Calliope's.....MUSHROOM SAUCE...STROGANOFF-STYLE and meal idea
Make some homemade creme fraiche beginning the day before. If you forget, you can always use sour cream...but the fraiche is best!
1-bag Mueller's egg noodles, cooked till just done, drained, not rinsed drizzled with a bit of melted butter to keep them from sticking.
2- 8oz. boxes of button mushrooms, washed quickly and remove stems, if you wish.
Heat a bit of butter till just sizzling, break up the mushroom caps and saute with some salt and pepper a few minutes. Add 1 cup chicken stock, 1-heaping tablespoon of Dijon mustard, 1-large teaspoon dry dill weed and 1/4-cup brandy, simmer a few minutes more and puree till semi-smooth.
Pour over the noodles and mix. Add the creme fraiche and mix along with about a tablespoon of paprika.
*optional...you may wish to mix in some drained tuna "fillet packed in olive oil".
Saute one medium red onion, rough chopped, till tender crisp and mix in.
Top with minced scallions and fresh parsley, then serve. This goes very nicely with My version of Cream of Tomato Soup..(add Tofu for protein, if you don't add the tuna to the pasta mix) and a simple green salad with a light vinaigrette.
A light fruit based dessert seems right to finish this meal. Or a pound cake covered with fresh seasonal fruit and a generous dollop of vanilla ice cream.
