Almond Peach Muffins From: rec.food.cooking Makes 12
1 1/2 cups all-purpose flour 1 can sugar 3/4 teaspoon salt 1/2 teaspoon baking soda 2 eggs 1/2 cup vegetable oil 1/2 teaspoon vanilla extract 1/8 teaspoon almond extract 1 16 oz. can peaches, drained and chopped 1/2 cup almonds, chopped
Preheat oven to 375 degrees and grease or paper line and muffin tin.
In a large bowl combine flour, sugar, salt and baking soda. In another bowl beat eggs and stir in oil, vanilla and almond extracts. Stir in dry ingredients until just moistened. Fold in peaches and almonds.
Fill prepared muffin tins 3/4 full and bake 20 - 25 minutes. |
