Blueberry Coffee Cake

My mom has made this for nearly 40 years - it’s great.

2 cups flour
1 cup sugar
3 tsp. baking powder
pinch salt
1/2 cup shortening
2 eggs, beaten
1 cup milk
1 1/2 cups blueberries
1 1/2 cups coconut

Sift flour, sugar, baking powder and salt together. Cut in shortening. Combine eggs and milk; stir into dry mixture. Fold in berries. Pour batter into 2 greased 8 or 9" layer cake pans. Sprinkle with coconut. Bake at 375 degrees for about 25 minutes, until top is a deep golden brown.
