These are one of my family’s favorites. They taste almost like pound cake. They also freeze well in the event there are any left! Makes about 1 dozen
1 cup chopped strawberries 2 cups flour 3/4 cup sugar plus 1 tbsp. sugar 2 tsp. baking powder 1/2 tsp. salt 3 eggs 1/4 cup oil 1/2 cup milk 1 tsp. vanilla extract 1 tsp. grated orange peel or extract 12 whole strawberries, cut fan shape (for garnish)
Sprinkle strawberries with the 1 tbsp. sugar and let stand.
In a large bowl, sift flour, remaining 3/4-cup sugar, baking powder and salt.
In a smaller bowl, beat eggs until light. Add and blend well, oil, milk, vanilla and orange peel. Beat until well blended.
Add egg mixture to flour mixture. Stir until mixed, 10 to 15 strokes.
Drain chopped berries and fold into batter.
Fill paper lined cups 2/3 full. Bake in a 400 oven 15 minutes or until toothpick inserted in center comes out clean.
Serve warm or cooled. Garnish each with fan-shaped berry.
