No-Knead Oatmeal Bread From: Annie Downing Newsgroup: misc.consumers.frugal-living Date: 11-9-2000 Makes 2 loaves
Combine 2 cups boiling water 1 cup rolled oats 1/3 cup shortening 1/2 cup molasses* 4 tsp. salt
Cool to lukewarm and add: 2 pkgs. of yeast or 4 tsp. bulk yeast Blend in: 2 eggs
Add: 5 1/2 cups flour Combine until dough is well blended.
This dough is much softer than most yeast breads. In order to shape, you’ll need to chill it in a greased bowl for at least 2 hours. Shape the chilled dough on a floured surface and place in greased loaf pans. I just scoop it into the greased loaf pans, but you might not care for the shape. Let rise until doubled (about 1 hour if unchilled, 2 hours if chilled. Bake at 350 F for 1 hour.
*If you don’t have molasses handy, you can use brown sugar and add a little more water.
