Cherry Pound Cake
3 cups sugar 1 1/2 cups vegetable shortening 6 eggs 1/4 teaspoon salt 3-3/4 cup sifted flour 3/4 cup milk 3 teaspoons vanilla or butternut flavoring 1/2 of 12-ounce jar of maraschino cherries, drained and chopped
Cream sugar and vegetable shortening. Add eggs, one at a time, beating well. Sift flour and salt together. Add flour to milk alternately to the creamed mixture. Blend in vanilla flavoring. Fold in cherries. Bake 1 1/2 hours at 325 degrees F. in greased tube or large loaf pan. Cool, and frost with Cherry Frosting.
Cherry Frosting
1 (3 ounce) pkg. cream cheese, softened 2 cups confectioner's sugar 1 teaspoon butternut flavoring 1/2 of a 12 ounce jar of maraschino cherries, drained and chopped 1/2 cup pecans 1/2 cup coconut
Mix all ingredients well and spread over cake.
