My Favorite Chili
1 cup red bell pepper, chopped 1 cup chopped onion 3 large cloves garlic, chopped 2 tablespoons oil 1 (28 oz.) can tomatoes, chopped (undrained) 1/2 cup wine, red or white 1 envelope chili seasoning mix 1 lb. ground beef 2 cans red kidney beans, drained
Saute peppers, onions and garlic in oil until tender (about 20 minutes). Using a slotted spoon remove vegetables and set aside. In same pot, brown ground beef. Drain fat. Add chili seasoning mix and saute for about 5 minutes. Add sauteed peppers, onions, garlic, tomatoes, and wine. Simmer for about 45 minutes. Add beans and cook for another 15 minutes. Add salt and pepper to taste.
