Fruited Rice Pilaf From: Woman's World magazine, 8-23-94 Yield: 6 servings
2 tbsp. butter or margarine 1/2 cup chopped scallions 1/2 cup rice 1/2 cup bulgur 1 cup orange juice 1/2 tsp. salt 1/4 cup raisins 1/4 cup sliced almonds
In a saucepan set over medium heat melt butter. Add scallions and cook until lightly browned, about 5 minutes. Add rice and bulgur; cook, stirring constantly, 2 minutes. Stir in orange juice, salt and 1 cup of water. Bring to a boil. Reduce heat to low, cover and simmer until liquid is absorbed, about 20 minutes. Stir in raisins and almonds.
