Zucchini Jam Recipe from: Frances Bolton
A great way to use those overabundant zucchini! You'd Never Know It Wasn't Orange Marmalade!
Yield: 8 jars
4 cups finely grated zucchini 1 orange, ground 8 ounces crushed canned pineapple, canned with juice 4 1/2 cups granulated white sugar, more or less to taste 2 tablespoons lemon juice 3 ounces orange gelatin, not diet
Grate the zucchini finely in the food processor. The yellow skinned zucchini is extra nice in this recipe. Wash the orange. Cut in sections and remove any seeds. Chop in food processor. Use the rind and all. Combine the zucchini, orange, the whole can of pineapple with juice, and the sugar. I use 5 cups for an 8 jar scaled recipe. Be sure to use a stainless steel pot. Bring to a boil and boil 10 minutes. Let sit overnight. In the morning bring to a boil; boil 10 minutes. Add the lemon juice and package of orange gelatin. Put into clean canning jars and hot water bath for 20 minutes.
