3 cups freshly shelled peas 1/2 cup water 3 Tablespoons butter or margarine 1 shallot or green onion, chopped 1 teaspoon salt freshly ground pepper 1 tablespoon sugar 2 teaspoons chopped mint
This recipe originated in the kitchen of Jeffersonian Virginia.
Place peas, water and butter in saucepan over low heat. Cover and simmer for 10 minutes. Add shallot, salt and pepper to taste. Cover and simmer for 15 to 20 minutes, or until tender. Stir in sugar and mint.
