Tom's Chipotle And Crackling Cornbread Recipe By : Tom Solomon Serving Size : 6
1 1/2 cups yellow cornmeal 1 cup all-purpose flour 2 eggs 3 tablespoons baking powder 2 tablespoons melted shortening or lard 1 teaspoon salt 3 medium chipotle peppers -- finely chopped 1/2 small yellow onion -- finely chopped 4 cloves garlic -- minced fine 3 dried tomatoes -- minced fine 1/2 cup pork cracklings 1 1/4 cups beer
Combine all ingredients in a mixing bowl and combine thoroughly.
Pour mixture into a greased cast-iron skillet. Preheat oven to 450 degrees. Place skillet into oven and bake for 20-25 minutes, or until top is golden brown and toothpick can be inserted into the bread and removed clean.
Serve warm.
