Individual Baked Alaskas
4 oatmeal, cocoa, or almond cookies (each 3 inches in diameter) 1 pint ice cream (any flavor), slightly softened
Dehydrated pasteurized egg-white product or meringue powder dissolved in water according to package directions to equal 3 egg whites
1/4 teaspoon cream of tartar 1/2 cup sugar Sugared sliced fresh fruit or berries or ice-cream topping (optional)
Preheat the oven to 450° degrees F. Place the 4 cookies on a small baking sheet (preferably insulated, see Tip). Scoop 1/ cup of the ice cream onto each cookie. Place in the freezer while preparing the meringue.
In a large bowl, combine the dissolved egg white product and 1/4 teaspoon cream of tartar. With an electric mixer, beat on high speed until soft peaks form, then gradually beat in the 1/2 cup sugar, beating until stiff peaks form. Spread the over the ice cream, covering it completely. Bake and serve immediately, or return to freezer until ready to serve.
To serve, bake 3 to 5 minutes, or just until the meringue to brown. Transfer each dessert to a serving plate and top fruit, berries, or ice-cream topping, if desired. immediately. |
