Fried Tuna Sandwiches Serves 4-6
This makes a hearty meal, filling enough for the biggest appetites.
1 (6 oz. Can) of tuna in water 1 hard boiled egg 2 large dill pickles, diced 1/4 cup shredded or diced cheese 1 Tablespoon finely diced onion 1/2 cup mayonnaise 2 eggs, well beaten sliced bread. Vegetable oil
Mix first six ingredients well, make sandwiches from it and cut diagonally. Put about two tablespoons of oil in a skillet and heat to medium.
Using a flat dish (a pie pan works great here), quickly dip the sandwich into the beaten egg to coat all around, then fry until slightly brown, turning several times. (They brown quickly, on the order of French toast.) Serve hot.
