4 cups berries 3/4 cup sugar 3 tbsp. cornstarch 1 1/2 cup water 1 small pkg Strawberry Jell-O 1 (9-inch) baked pie shell -- cooled 1(8 oz.) container Cool Whip, thawed (for topping)
Mix berries in a large bowl and pour into pastry shell.
Mix sugar and cornstarch in a medium saucepan. Gradually stir in water until smooth. Stirring constantly, cook on medium heat until mixture comes to a boil, then boil 1 minute. Remove from heat and stir in gelatin. Mix until gelatin is dissolved. (Be careful: this mixture is molten and will burn you if you splash it around.) Cool for about 5 minutes, then pour over the berries in the pie shell. Tap pie pan to force out air bubbles, then refrigerate for at least 3 hours. Spread with Cool Whip and garnish with a few extra berries to serve
NOTES : I used strawberries and blueberries, and one package of raspberries for a patriotic red, white and blue look. You can alter the Jell-O or fruit flavors to experiment.
