Countryhouse Pasta with Orange Cream Sauce Serves 4
3/4 pound bow ties (or your favorite pasta) 1/2 cup unsalted butter 1 cup fresh sliced mushrooms 1 tablespoon orange zest, grated 3/4 cup heavy cream 1 cup orange juice 1/4 cup grated Parmesan cheese 1/2 teaspoon white pepper 1 tablespoon chopped fresh parsley Salt to taste (optional)
Begin cooking the pasta as directed. Meanwhile, in a medium skillet, melt the butter over low heat. Add the mushrooms and orange zest; cook over low heat for about 3 minutes. Then add the cream and orange juice, stirring constantly, and cook on high heat about 5 minutes. Add the parmesan cheese, pepper and salt, and cook another 2 to 3 minutes or until sauce thickens slightly. Drain the pasta and toss with the sauce. Garnish with parsley. |
