Seven Layer Italian Salad (Light) Courtesy of Dale & Gail Shipp, Columbia, MD Yield: 8 Servings
SALAD 3 cups shredded Iceberg Lettuce 1 medium sweet red pepper, cut Into thin strips 1 medium cucumber, sliced 2 cups diced tomatoes 1 medium yellow pepper, cut into 1/2 inch cubes 1 cup thinly sliced celery 3/4 cup sliced green onions
DRESSING 1/4 cup red wine vinegar 1/4 cup water 1 tbsp vegetable oil 2 tsp Dijon mustard 1 tsp dried Italian seasoning 1 tsp minced fresh garlic 1/2 tsp pepper 1/4 tsp hot sauce
TOPPINGS 1/2 cup Shredded nonfat mozzarella cheese 1 small Sweet red pepper, cut into rings
Layer fist seven ingredients in a 3 quart glass bowl. Combine vinegar and next seven ingredients in a small bowl, stirring with a whisk. Pour vinegar mixture over vegetable layers. Sprinkle with cheese.
Cover and chill.
Garnish with red pepper rings.
