Broccoli Chowder Formatted 03-17-2000 by Joe Comiskey - " This recipe yields 6 servings.
3 packages frozen broccoli - (10 oz each) 3 cans chicken broth 3 cups milk 1 cup finely-chopped cooked ham 2 teaspoons salt 1/4 teaspoon freshly-ground black pepper 1 cup light cream or half-and-half 1/2 pound cheddar cheese -- grated 1/4 cup butter or margarine
Cook broccoli in one can of broth, covered until tender. Remove broccoli and chop fine. Add remaining broth, milk, ham, salt and pepper. Bring to a boil. Stir in remaining ingredients and broccoli. Heat and serve.
Comments: You can used chopped broccoli or 1 large fresh bunch. It is also good using Swiss Cheese.
