Andes Shrimp and Corn Main-Dish Chowder Formatted 03-17-2000 by Joe Comiskey This recipe yields 4 servings
1/4 cup chopped green onions 1 small garlic clove -- minced 1/8 teaspoon cayenne pepper 1 tablespoon butter - (to 2 tbsp) 2 cans cream of potato soup 1 package cream cheese - (3 oz) -- softened 1 soup can milk - (to 1 1/2 cans) 2 cups frozen cleaned raw shrimp 1 can whole kernel corn - (8 oz) -- not drained
In saucepan, cook onions with garlic, cayenne pepper, and butter until tender. Blend soup, cream cheese and milk. Add shrimp and corn. Bring to boil, stirring often. Reduce heat and cover. Simmer 10 minutes or until done.
