Asparagus with Creamy Orange Vinaigrette Recipe By : Canadian Living's Best Vegetables Makes 4 servings.
1 pound Asparagus spears -- cooked 2 tablespoons Chopped fresh chives or green onion
***DRESSING*** 1/2 cup Light mayonnaise 1 tablespoon Grated orange rind 2 tablespoons Orange juice 1 tablespoon Lemon juice 1/2 teaspoon Dijon mustard 1/4 teaspoon Salt 1 pinch pepper
(DRESSING): In bowl, whisk together mayonnaise, orange rind and juice, lemon juice, mustard, salt and pepper.
Arrange asparagus on serving platter; pour dressing over top. Sprinkle with chives.
