This is the ultimate combination of chocolate and mint. It is my most requested fudge.
12 oz bittersweet chocolate, chopped 3 oz unsweetened chocolate, chopped 1/2 cup marshmallow creme 3 cups sugar 1 1/2 tsp peppermint extract (be generous) 2/3 cup water 1 can sweetened condensed milk 2/3 cup whipping cream 1/2 cup unsalted butter
Line a 9 inch pan with foil or butter one of those cheap aluminum pans. Place chocolates, marshmallow and peppermint in bowl. Mix sugar, milk, water, cream and butter in a heavy saucepan. Stir over medium-low heat until sugar dissolves. Increase heat to high and bring to a full rolling boil. Reduce heat to medium-high and stir slowly until candy thermometer reaches 235 F.
Pour boiling mixture over ingredients in bowl. Stir vigorously with spoon until chocolate melts and fudge thickens slightly, about 2 minutes. Immediately pour fudge into prepared pan, smooth top and chill until firm.
