CHICKEN ‘MEATBALLS' Japanese, Deep fried. Untested.
1/2 large onion, chopped 1 pound chicken, chopped finely 1 tbsp. sugar 1 1/2 tbsp. sweet rice wine 2 tbsp. soy sauce 1 egg 2 tbsp. oil 3 1/2 tbsp. water 1 1/2 tbsp. sherry
Soak chopped onion in water; squeeze out moisture. Combine chicken and onion with sugar, rice wine, 1 tbsp. soy sauce, and egg. Stir until thoroughly mixed. Roll into bite-sized balls. Heat oil in pan; brown meatballs on all sides. Combine water, sherry, and remaining 1 tbsp. soy sauce. Add to meat in pan; cook until liquid in almost evaporated.
