Apple Upside-Down Cake

Topping:
3 cups peeled, cored and diced Granny Smith apples
1 tablespoon vegetable oil
1 teaspoon cinnamon

Cake:
1 extra large egg
1/4 cup vegetable oil
1/2 teaspoon cinnamon
3/4 cup unsweetened apple juice concentrate
1 and 1/2 cups all-purpose flour
1 and 1/4 teaspoons baking soda

Oil and flour an 8x8x2-inch glass baking dish.
To prepare topping: In a large bowl, mix together the apples, oil and cinnamon. Spread the mixture evenly into the prepared baking dish.

In a large bowl, combine egg, oil, cinnamon and concentrate: beat well by hand. Add the flour and beat for 2 minutes by hand. Stir in baking soda quickly, then mix and pour over the apple mixture.

Bake about 30 minutes at 350F, then reduce heat to 325F and bake for about 5 minutes or until cake tester is clean. Cool 20 minutes on a wire rack before loosening the cake with a knife. Invert the cake onto a serving platter.
