Hamburger or Hot Dog Buns Source: Better Homes and Gardens Makes 12 Hot Dog or Hamburger buns
4 to 4 1/2 cups flour 1 package yeast 1 cup milk 1/3 cup sugar 1/3 cup butter, margarine or shortening 1 teaspoon salt 2 eggs
Combine flour and yeast. heat milk, sugar, butter and salt in saucepan until just warm (115 to 120 degrees F). The butter/margarine/shortening should be just melted. Stir mixture constantly while heating on stove. Add flour to mixture; add eggs. Beat at low speed of electric mixer for 1/2 minute, scraping bowl down. Beat 3 minutes at high speed. Stir in as much remaining flour as you can with a spoon. Turn dough out onto lightly floured surface and knead for 6 to 8 minutes. The dough should be satiny smooth and elastic. Shape into ball. Place in greased bowl and turn once. Cover and let rise until double, about 1 hour.
Punch dough down. Shape into buns. For hamburger buns divide dough into 12 equal portions. cover; let rest 10 minutes. Shape each portion into a circle, folding edges under. Press flat between hands.
For Hot Dog Buns: Divide dough into 12 equal portions; let rest 10 minutes. Shape rolls about 5 1/2 inches long, tapering ends.
For both Hamburger and Hot Dog buns place on greased baking sheet. Cover and let rise until nearly double, about 30 minutes. Bake at 375 degrees F for 12 to 15 minutes until golden brown.
