Vacuum Cleaner Cookies (using cake mix) by Ronna Park February 24, 2001 They are named "vacuum cleaner" cookies because they disappear so quickly! Makes 24-36 bar cookies
1 box dry cake mix - your choice of flavors 1 egg 1/2 cup margarine or butter, melted 2 eggs 1 (8 oz.) pkg. cream cheese, softened 3 cups powdered sugar 1/2 cup coconut (optional) 1/2 cup walnuts, chopped
Mix together dry cake mix, egg, and melted butter until smooth and thick. Spray bottom of a 9x13-inch baking pan with non-stick cooking spray. Pat cake mixture into bottom of pan and set aside.
In a large mixing bowl, blend eggs, cream cheese, powdered sugar, coconut and nuts until smooth. Pour over cake mixture.
Bake at 325 degrees for 45 min. Let cool, and cut into squares.
Experiment with different flavors of cake mix for variety - a new cookie every time! Whether you use chocolate, lemon, yellow, spice, or strawberry - you save time because you never have to measure that portion of the ingredients.
