Basic Popovers (sugar in the batter) rec.food.baking/Dave Walkden
Popovers shouldn't fall after they are done, unless you overfilled the baking container.
Makes: 8
2 cups all-purpose flour 1/2 teaspoon salt 1 tablespoon sugar 1 tablespoon vegetable shortening 1 cup milk -- room temperature 2 large eggs -- room temperature
Pre-heat oven to 400 degrees.
Put all the ingredients at room temperature into a mixing bowl and beat at high speed for about 3 minutes. Scrape down the side of the bowl a couple of times. The ingredients can also be mixed in a blender for about 3/4 to 1 minute.
For baking, use large custard cups, or heavy cast iron popover pans or special steel popover baking cups. Grease the cups well including all around the edges. Pre-heat baking cups in the oven for about 2 minutes.
Place a small amount of shortening into the bottom of the cup.
Fill about half-way with the mixture and place into the center of the oven. Cook the popover for about 20 min. at 400 degrees, reduce the heat to 375 degrees and continue to bake another 20 minutes.
NOTES : Do not open oven door for a look until the last 10 minutes. The cold air will flatten your popovers.
