Popovers (crispy) rec.food.baking/Patricia Kramer
...very cripsy and delicious, here's my recipe:
Preheat oven to 375 deg F
3 eggs 1 cup flour 1 cup milk 1/2 tsp salt
Spray muffin tins with Pam, put approx. 1/2 tsp butter into each cup, put in oven just to melt.
Beat eggs, add milk, add flour and salt.
Pour batter in cups (only half full, very important, since if more full won't "pop").
Bake for 40 minutes.
Quickly put a slit in side of each with sharp knife (to let air out and allow to crisp.
Put back in over and bake 10 more minutes.
