Here is a very good appetizer for the holidays. We are from Norwegian descent and we realllly enjoy this (not that this is a Norwegian dish or anything - but we love herring). I hope you will too. If people are squeamish about herring, just don't tell them what it is until after they say how delicious this dish is (make sure you know they aren't allergic to fish though). This is served at Thanksgiving and Christmas in our home :) can't wait! You know what??? I think I'll bring this to our departmental holiday potluck.
2 cups (1 pint) sour cream 1 (12 oz) jar herring tidbits in wine (undrained), chopped 2 apples, peeled, quartered, cored and chopped 1 medium Bermuda onion, quartered and chopped 1/2 cup seedless grapes 2 hard-cooked eggs, chopped Rye rounds
combine first 5 ingredients in large bowl and mix thoroughly. Cover and refrigerate. Before serving, add eggs and toss lightly. Turn into dish. Serve with rye rounds.
