Boiled Cookies

These are a big hit. This is a little different than the classic recipe. I find that using water instead of milk brings out more flavor from the cocoa. This is balanced by using more peanut butter and less margarine:

1/2 cup water
4 tbsp cocoa
2 cups sugar
6 tbsp margarine
2 tsp vanilla extract
3/4 cup peanut butter
2 1/2 cup "quick" rolled oats

Bring water and cocoa to a boil, add sugar and margarine, simmer until sugar is dissolved. Remove from heat and stir in peanut butter and vanilla. Stir in oats, and mix well. Cool slightly, then drop by heaping tablespoons (or larger) on wax paper or parchment to set.
