Gumdrops From: Ladies Home Journal Dessert Cookbook: Makes: about 1 3/4 lbs.
3 envelopes unflavored gelatin 2 cups sugar 1/8 tsp. salt 1 tsp. grated lemon or orange rind or flavored extract to taste 1 tbsp. lemon or orange juice Food coloring
Mix the gelatin, sugar, salt, and 1 cup water in a heavy saucepan. Bring to a boil and simmer, without stirring, for 10 minutes. Remove the pan from the heat and stir in the remaining ingredients. Add a few drops of the food coloring of your choice. Taste for flavor; add more juice if you wish. Pour into a square pan, which has been rinsed with cold water. Chill overnight. Cut into squares and roll in additional sugar or in colored sugar.
